They like sugar, right? I have a nice trap for them OP.

Take a 2L plastic coke bottle, but the top of the bottle so you can use it as a funnel. Place it reversed on the bottle. Make sure there a nice amount of coke left inside, and leave it near their nest.
It was quite effective for me, altough, it won't destroy the nest obviously.

Make a jam-trap. For you yanks, it's a jelly-trap

1. Take one recently emptied jam-jar/jelly jar, ensuring it has some left overs. Bits you couln't scrape out are perfect for this.
2. Put a hole in the lid large enough for the wasps/hornets to get into.
3. Fill the jar with water and leave it outside.

They're highly effective and very deadly. A few of them scattered around your garden can wipe out a hive.

Similarly, I just use buckets with some soapy water at the bottom then thread a piece of whatever they are attracted to at the time ie a piece of fried chicken or smoked salmon, onto a piece of string then dangle that from a stick or wire laying across the top of the bucket so it is about an inch or so out of the water. They will usually fall into the water before they ever fly out of the bucket again. They are really clumsy fliers and subject to sudden variations in air current, so a fan aids them to their death too, but they'll do it just fine by themselves. I have also loaded my bug zapper with a juicy piece of meat and watched the mayhem too...which brought me to an idea. Using the zapper unit inside a sauna tube with a slit in the bottom to allow them to roll out all willy nilly over top an old pachinko ball machine, or otherwise an old piece of paneling with some pegs in it and a piece of plexiglass on the front makes a great beer drinking party game! "Incoming! zzzzzZZzzP...Ooh Aha it's landed in the green box...You drink!" They roll up nicely and provide hours of fun...well, fun when there's nothing else to do I guess. lol

OP here, the carpenter bees aren't actually a problem but they're still a pest and eat the wood like termites. My biggest thing is not being able to go outside without yellowjackets and wasps going "wtf is this nigger doing in my yard?"
