Chicken curry and rice with avocados, tomato and yellow bell pepper, garnished with fresh coriander. Yeah, I'm a pretentious faggot today.

1 onion
1 tbsp garlic paste
1 tbsp cinnamon
1 tbsp cardamom
1 tbsp cloves
1 tbsp ground coriander
1 tbsp chili powder
1 tbsp ground ginger
2 tbsp turmeric
salt and black pepper

Cooked in a small amount of oil until onion turns slightly brown.

I'm making some chocolate cupcakes with a mint frosting for St. Patrick's Day.

I freaking LOVE mint. I could drink pure mint extract if it wasn't so expensive. However, I know I'm in the minority there. A lot of people like mint, but don't love it.

Since I'm not the consumer of these cakes, how much mint would you say is the right amount? Just a hint of mint? Enough so it's the primary flavor in the frosting? Enough that it leaves a slight mint aftertaste?

Mïgas, from a place called "Starseeds" in Austin Tx. For those unfamiliar, it's eggs with peppers and onions and cheese with either corn chips or fried tortilla strips cooked into it (I like it crunchy). It's served with home fries and black beans, but I always nix the beans and go with double home fries. The only thing that makes this meal better, is having it be the closer to a night of drinking with a bunch of girls ^-^

Alright folks...
I got a deep fryer for Christmas and have been frying just about everything I can think of.
Last night I was looking around for more stuff to fry when my eyes landed on a case of Coca Cola sitting in the pantry. At first I just laughed and kept looking, but the more thought about it, the more I realized that it was actually possible.
I am now determined to make this work but could use some pointers and would like a little input.
The vision: Bite sized Coca Cola flavored gummies that I can batter and deep fry. Ideally these would remain semisolid after frying and slight cooling so that it gave the sensation that you are actually eating cola.

I figure the first step will have to be a cola reduction, what I need help on is actually making the gummies. I've never worked with gelatin (is that my best bet?) before and all the gummy recipes I see online call for jello packages. Can someone with a little more experience with confections enlighten me as to how to make a very thick, chewy candy (the consistency of Jujyfruits perhaps) using a cola reduction?

There is a candy company that already makes coke bottle shape and flavored gummies (Harbino or something like that I think), they're okay, they do taste like cola. Trick to make em hard would be to buy the bag, and open it right away, wait between a week and a month for them to get really stale, the put them in the freezer for a few hours.
Then try to fry em, I'm not a frying expert, but I do know that gummy candy is a pain in the ass to make, especially when they already have a candy on the market that tastes like it.

Hey /kitchen/

I have a short amount of food for the rest of the month. I'd like to know ideas to diversify the meals a little bit or make them better if possible. Here is what I have

White rice
Instant mashes potatoes
9 disgusting unbreaded pollock fillets
sugar
mustard
V8
400ml of grapefruit juice
soya sauce
curry spice
coriander spice
turmeric spice

well this is tough but

soak the fish in the grapefruit juice over night

cook the rice, season with the curry, turmeric is useless unless you want to add it for a nice yellow color.

put some of the rice on a fillet and fold it over then bake in the oven

you could make a simple syrup and add the rest of the grapfruit juice to it and pour it on the fish?

serve with v8

Debread and dice the fish for a stir fry. Cook the rice in V8.

You could make potato pancakes with the flakes but I'm not sure what you'd serve with it.

Dip the fish in egg or water or milk and bread with the potato flakes. Fry.

My favorite it the BBQ kettle chip. The only problem is that these are very high in salt (even for a flavored crisp). This can be fixed by tossing them with plain, or low-salt crisps.

As a side with sandwiches, I find regular kettle chips to be the best accompanyment.

I find the lack of oil in the baked lays somewhat off-putting for a crisp. Granted, they are a delicious food.

So crunchy, so thick and not-too-salty, just awesome.

For a flavored chip (other than salt that is) I've honestly never found something I liked more than Nacho Cheese Doritos.

Fry onions + garlic, add beef, drain then add salt, pepper & basil.
Fry mushrooms + garlic + carrot pieces (can add more veg too).
Mix both together with favorite tomato sauce recipe.
Layer with mozzarella slices on top of each meat layer.

Normally I do a really cheesy bechamel sauce (with an egg) on top that rises a little and turns golden brown. This time we fucked up & used some shitty "Dolmio" white sauce which tasted weird.

i usually take ground beef, cook for some time off to the side on pan A, add salt & pepper.
take garlic paste (i usually make mine, unless i'm terribly lazy), red onion (not much; two med slices), and a good amount of mushroom, bit of spice (whatever's preferred at the moment). cook on pan B.
prepare a tomato sauce in a pot, heat to whatever. pop pan B in first, stir. once thoroughly stirred, add pan A. let cook for some time... add salt and pepper.
layers of about 1/4" of sauce, topped with a thin spread of whatever cheese (some goat cheeses are fucking amazing). after about 1.25", add thin spread of dill (non-dried preferred), and continue layering up till 2.5". at 2.5", slightly thicker spread of cheese, top layer that shit, and bake until w.e.

i'm not including proportions or what i've used before (spice wise), mainly because i eyeball/intuition what i usually do.

Favorite egg recipes? I've been eating a lot of eggs lately and I'm looking for simple ideas.

Currently I prefer my eggs hard boiled with a pinch of salt and paprika.

This recipe worked well for me. Replace the sausage meat with minced pork. Make sure to get your fat really hot to make the outside crisp up nice. If you want some spice to it you could always throw some chilli powder into the mix.

1/4 of an onion
1 clove or farlic
1 handfull of chopped bacon
1 tomato
1 handfull of mushrooms
3 eggs
salt, pepper, blablabla


Fry the bacon on a pan. when the fat melts, add the chopped onion and minced garlic. cook untill the onion is transparent. add musrooms. cook untill they are soft. Add tomatos and eggs. Mixture everything, so you still have some white stuff ut a creamy yellow delicious goodness. turn the fire off. Add salt and pepper. EAT.
